Abstract: Food proteins are primary macronutrients, while polyphenols are secondary metabolites in plants, known for their antioxidant properties and therapeutic effects. Interactions between plant protein and polyphenols occur naturally in many formulations, affecting their structure, functionality, and nutritional properties. Here, we discuss the structure and techno-functional properties of plant proteins and polyphenols, their interaction dynamics, and structure formation in food colloids. The incorporation of polyphenols has been shown to tune the physical, chemical, and functional properties of plant proteins, impacting the structure of plant-based foods. The combination between plant proteins and polyphenols shows promising as functional ingredients in plant-based foods.
